Beef Short Rib Soup – Galbitang – 갈비탕

Galbitang or beef short rib soup is one of my favorite go to Korean comfort foods. Clear savory broth, tender meat, chewy noodles all paired with a bowl of optional rice make this a great eat during the winter months or if you’re looking for some comfort in your belly. While some recipes state that you can make a spicy version, I have yet to find a version where the spice adds to the flavor profile instead of detracting from it. Instead, if you’re looking for something spicy, pair your Galbitang with some kimchi.
